Abstract
A book designed to help national authorities ensure that toxic chemicals, such as pesticides, heavy metals, polychlorinated biphenyls, aflatoxins, and other contaminants, are not present in food at levels that may adversely affect the health of consumers. Chapters cover the use of food consumption data and total diet studies to derive intake levels, the assessment of duplicate portion studies, and the calculation and reporting of dietary intakes.
